While Tonya is roasting her pig for 125 people, Mike and I and TEAM THUNDERPANTS will be entering the third annual La Salina Cantina Chili Cook Off and Marti will be braving the storm in North Carolina

Mandy had we been making it out to our East Coast family this next week I'd be bugging you for a visit! They're right smack in Pittsburgh, PA.  I haven't heard anything but "STEELERS, STEELERS, STEELERS" since I met Eli's family.. haha.

And Katie, you guys have tons of fun!  I'll be dreaming of yummy chili!  Maybe when we come down your way to visit you can make us some of the "World Famous Team Thunderpants Chili!"

Marti.. we're still thinking of you and everyone in the way of that storm.  So scary.  :/

Me.. I've got work.. here's hoping I survive it this weekend.  This last week was brutual.. me and the toilet made some good friends on Tuesday night before I caved in and came home.

Thanks so  much for the well wishes.. we've been up for an hour or so. ( Got a lovely start by a WONDERFUL PM from Lori.. thank you darling.. made my day!)

we're chopping  and boxing up wood .. yeah.. we're gunna cook with wood..

Eight pounds of tri tip is ground up ( rough chili grind... ) the secret ingredient is packed up as well as our Team Thunderpants aprons and hats.

Tonya.. good luck with the pig.. Hope he stays in the pit while you roast him.

And a special prayer for all of you on the East Coast experiencing such horrid weather.. stay safe and warm and DRY

I used to make my own Chili, but had to give it up. I was having to import chili powder from Texas. I have been thinking of starting back up again. I haven't had a good bowl of Chili in years.

Reminds me of another dog story. When I lived in Dallas in 1974, I was into Model Railroading and had a friend who was a graduate student at Nort Texas State in Denton. Every other weekend he would come down on Saturday and we would work together on some models and I would make a pot of Chili. I was used to using 3 pounds of meat, so I had the other ingredientsl sized for that. Well, my friend volunteered to bring the meat, and I would provide everything else. Only he provided only one pound of meat, and I put the spices and everything for 3 pounds. Talk about HOT!

I had a male black Lab named Brutus at the time. He loved to catch french fries from fast food and loved to lick the chili bowls. It was so hot, neither my friend nor I could finish it. So I put a bowl half full of chili down for Brutus. He approached the bowl, sniffed and took a lick. His ears went up, he backed up a few feet and cocked his head looking at the bowl. He then went around to the other side and come in from that direction, took a lick, lifted his ears and backed up and again cocked his head looking at the bowl.

Then he wen on the far side of the bowl closest to the windows which was 90 degrees off from the previous taste. Again he approached slowly, took a lick, backed up, lifting his ears and cocking his head. But, Brutus the great moocher was not about to give up. He again, went around 180 degrees, coming in from the fourth side for another taste. He again, cocked his head and lifted his ears. Then turned and gave me a dirty look, walked away and layed down. My friend and I just rolled with laughter.

It looks like it was great fun tho!  I hope everybody's tummy's is feeling ok!

My party went well too.  Fancy is exhausted today from following me around all day LOL! She really was wonderful.  Polite and friendly as she could be, even to new people.  Nobody got hurt, no arguments and the cops didn't show up, and my diving board didn't get broken. It was a good day (teehee).  I'm not a beer drinker so I don't know much about these things, but 3- 20 packs, one 12 pack, and one 6 pack of beer empties out on the patio.  Wouldn't a keg or a pony be cheaper?  It'd certainly be a lot less for me to clean up! And not the worry of glass being broken around the pool.  NO, the guys won't drink beer from a can.

Aren't you just the funniest and BEST Patriot fan in the world.. I hereby bequeath my plastic Patriot Chip and Dip helmet to you

Okay.. Here goes..

Team Thunderpants Chili

Eight pounds of rough ground sirloin

One pound Spanish or Argentine Chorizo

Three onions

Four cloves of garlic

three cans of tomatoes ( whole)

two cans of Rotel tomatoes

two cans of Mexican beer ( one for you and one for the chili)

four fresh chilies ( Jalapeno and Anaheim) ( fire roasted and seeded)

half a jar of chipotle chilies ( and the juice)

four ( or five) tablespoons chili powder

two tablespoons of cumin

salt

lots of fresh ground pepper

Mexican oregano

four quarts beef stock

One freshly squeezed lime

and now.. drum role please.....

four tablespoons of mole from Oaxaca. ( If you cannot fly down to Oaxaca, you can get a jar of Dona Marie's mole negro at the market)

You must dissolve the thick gooey mole in some broth before you add it as it looks and feels like modeling clay. I've tried chocolate and came in third at a contest once.. I like the mole better..

It's important to add the spices AFTER all your liquids.. according to International Chili Society rules BEAN are NOT allowed.

Sautee the beef and chorizo in a bit of olive oil.. add the onions only til translucent along with the fresh garlic.and chilies ( be sure and wear gloves while seeding the chilies ). add the tomatoes and broth and let it bubble.. then add the seasonings to your taste.. the mole can be added at any time..

This makes approximately five gallons of chili.. so cut it down to suit your company and or appetite.

Now for the toppings, grate some cheddar cheese and put green onions on top of the topping.. you  might like sour cream and avocado.. by then, no one cares, we're all so hungry after three hours over mesquite wood that we just want chili! ( you can use your stove if you want.. but it's better over wood

P.S.If you follow this recipe, you'll notice three distinct tastes while eating it.. there's the initial

" Grab Your Momma coz this is gunna hurt" taste

then the savory flavor of the meat and their juices from the many hours of simmering.. then the delightful aftertaste of the mole.. it smooths and cools..

          Wow Kate!!Thank you so much for your chili recipe.I promise I won't sell out to your competition.Well,maybe I won't....Everybody has a price.......And I'm getting tired of living in Tornado infested Hurrricane City, with a side serving of earthquakes and floods. Not to mention all the snow!!A little hacienda in Baja looks right up my alley about now.Honestly though, I'm really excited to follow this entire recipe,ironically,now that football season is just a few weeks away.I'll let you know how it goes with pictures and all.Especially trying to find some of these exotic ingredients.

           Now I feel kind of bad that I found a way around your requirement.Let me try this again.
