My doberman keeps chewing on his hind leg to the point where he has pulled off most of his fur in the spot. He does not have any signs of a bug bite/tick. What can I do to stop him from chewing on it? I tell him no but then when Im not there he does it.
What could be causing it? Any help is appreciated!

Take him to your vet. If it is the same spot, there is something bothering him, especially if he keeps nibbling at it. He will develop a sore if not corrected, and then he will develop scar tissue. If he only does it while you are gone, he may be bored and anxious over your absence. In that case get him some toys to occupy his time.

If he does it in front of you it could be lick granuloma,(flank sucking) a condition of constant licking of the
area till it becomes raw, it can be quite difficult to treat and you will definitely need the guidance and advice of a skilled vet.

As long as the dog is not chewing it till it is raw, you are fine, The problem cases will be raw with no fur and eventually develop the apearance of a hot spot (similar to a brush burn)

That's a good tip. Can you give brand info and did you get it from the vet?

Its just called "hot spot spray" It was $10 at petco

We have also used it as an afterbath rinse (from the instructions on the bottle) and it works great, esp with his dandruff
